We have had a lot of guests on our show, but this might just be one of our youngest! Twelve-year-old Zoe Giles—who has her own food and art YouTube channel called “Kids Create with Zoe”—proves it’s never too early to learn how to cook. Here, she shares her yummy and easy apple fritters, which she bakes in a mini muffin tin and tops with melted butter, sugar and cinnamon. “They’re a perfect snack and they may be half the size, but they’re full of flavor!” says Zoe.

Ingredients
- Unsalted butter, for greasing the pan, plus 5 tablespoons plus 1 teaspoon, melted 2 apples, peeled and diced into small cubes (about 2 cups) 2 tablespoons brown sugar, plus ¼ cup¼ teaspoon ground cinnamon, plus ½ teaspoon1 cup flour1 teaspoon baking powderPinch of salt ½ cup plain Greek yogurt ¼ cup granulated sugar 1 teaspoon vanilla extract
Topping:
- 4 tablespoons (½ stick) unsalted butter, melted1/3 cup granulated sugar¼ teaspoon ground cinnamon
Yield Preparation
For the fritters, preheat the oven to 350°F. Grease 12 cups of a mini muffin tin with butter.
Place the apples, 2 tablespoons brown sugar and ¼ teaspoon cinnamon in a small pot and cook over medium heat, stirring occasionally, until the apples soften slightly and the liquid evaporates, about 5 minutes.
Add the flour, baking powder and salt in a medium bowl and mix together. In a large bowl, mix together the yogurt, melted butter, granulated sugar, ¼ cup brown sugar, ½ teaspoon cinnamon and vanilla.
Mix the dry ingredients into the yogurt mixture and then stir in the apples. Portion the dough into the prepared muffin tin and bake for 12 to 14 minutes, or until the tops are lightly browned.
For the topping, in a small bowl, mix together the melted butter, sugar and cinnamon. Remove the muffins from the tin and quickly roll the tops in the butter mixture.
